Cheescake & Pumpkin Muffins in the NuWave Oven

These muffins were surprisingly easy to make.

Drop about 2/3 full into each muffin cup.

Add about a tablespoon of the cheesecake mixture and swirl slightly with a chopstick. Do not mix completely.

15 min. in the NuWave oven.

Done.

Yum!  You actually get a bite of cheesecake or muffin, instead of a pumpkin cheesecake mixture.

MUFFINS:
One 15 oz can pumpkin
1/4 cup  vegetable oil
2  large eggs
1  teaspoon vanilla
1  cup sugar

1 1/2 cups all-purpose flour
1  teaspoon baking powder
1/2  teaspoon baking soda
1/2  teaspoon ground cinnamon
1 1/4 teas. pumpkin pie spice
1/2  teaspoon salt

By hand, mix dry ingredients, mix wet ingredients, then mix them together.

FILLING:
8 ounces cream cheese,  room temperature
1 large egg yolk
5 tablespoons sugar
1/8 teaspoon vanilla extract

Beat w/mixer until mixed.

Baked in NuWave on 1” rack for 15 min.

(my variation of original recipe from Scoochmaroo, Intructables)

These look delicious. I'm on a diet, but I definitely could make these for a party. Cool recipe, keep posting your Nuwave creations.
